About Agostado Palo Cortado
Agostado Palo Cortado 2017 is a fortified wine, crafted in Sanlúcar de Barrameda, in Cádiz (Spain) using the region's traditional grape varieties: palomino, rey, and perruna de Trebujena.
Agostado Palo Cortado originates precisely in Bajo Guía, a stunning beach in Sanlúcar de Barrameda. There, in a former shipyard — opposite the Doñana reserve — Ramiro Ibáñez has been working since 2015 at his winery Cota 45, where the Cadiz winemaker aims to impart the characteristics of each vineyard to the wine and revive the traditional grape varieties of the area.
Specifically, with this name, Ibáñez refers to the metres above sea level where he believes the finest albariza, the spongy soil distinctive to the region, is found. This peculiarity aids the vines in withstanding the summer drought, thanks to the water reserves formed during the rainy months.
Regarding the production of Agostado Palo Cortado, Ibáñez adheres to two fundamental principles: spontaneous fermentation and achieving the necessary alcohol content without adding vinous alcohol (a practice known as fortification). Thus, to achieve this natural alcohol, it is essential to start with a high concentration of sugar, obtained through a brief sun-drying of the grapes.
The subsequent minimum aging of two years, alternating between biological aging (under flor) and oxidative aging, makes Agostado Palo Cortado an exclusive choice — only 1000 litres are produced — perfect for experiencing the tradition and soul of the Jerez region.
