About Caberrubia Saca IX
If you delve into the world of Bodegas Luis Pérez, prepare for a journey that intertwines history, innovation, and sheer passion for the land. It all began with Luis Pérez Rodríguez, a professor of oenology and former winemaker at Domecq, accompanied by his children, in a building dating back to 1844. Lovingly restored, that ancient corner became the winery's first laboratory of dreams, where they vinified for years until expansion inevitably necessitated a new, larger, more modern winery, without ever losing its essence.
The project commenced in 2002, with merlot, syrah, and petit verdot cultivated on the marls and gypsum of La Hacienda Vistahermosa, in Pago del Corchuelo. However, what truly excites is the latest phase, which marks a return to the roots of Jerez, to the authenticity of its vineyards and the wines that make history. In 2011, they began working with the native variety tintilla de rota, and since 2013, under the guidance of Willy Pérez, Luis's son, emerged one of the most thrilling projects of the current "Revolution of Jerez." Here, the true protagonist is the albariza, the legendary white soil that defines the unique character of the Marco de Jerez, prevailing over biological ageing and allowing the palomino fino grape to speak for itself.
From this spirit emerges Luis Pérez Fino Caberrubia Saca IX. The name "Caberrubia" pays homage to the land and the palomino fino grape, and each "Saca" signifies a unique batch that captures a specific moment of harvest and fermentation. In this instance, the Saca IX is a blend of various releases, selected from clusters of 50-year-old vines in Pago Carrascal, cultivated on the laminar albariza of Barajuelas, that white soil reminiscent of a deck of cards (hence the name) which imparts the wine with its minerality and freshness.
The harvest is a lengthy and meticulous process. The grapes are sun-dried and selected cluster by cluster. They are gently pressed, yielding only 35%, and ferment freely in cask. Each cask possesses its own personality, shaped by the ripeness of the grape and the sunlight it receives. The final blend of different sacas results in a complex, full-bodied, fresh, and gastronomic fino.
