About Chavy-Chouet La Taupe Bourgogne Rouge

In many cultural and religious traditions, godparents are entrusted with the mission of guiding their godchildren in values and principles. Beyond the church, this role assumes a much more practical dimension. A godparent can be a mentor, someone who patiently imparts wisdom and shares their experience to aid another's growth.
A perfect example can be found in the world of wine with Romaric Chavy. Now renowned in Burgundy for his precision and passion in winemaking, he began his apprenticeship at the age of 12, thanks to his godfather, the visionary François Mikulski. Among barrels, fermentations, and vineyards, Romaric learned from his godfather not only techniques but also philosophy, respect for the land, and a love for the craft.

This early learning served as a springboard when, at the age of 22, following the death of his father Hubert Chavy, he had to take on the family project Chavy-Chouet. The winery is the result of two surnames from two villages, united by a love for the land over seven generations: the Chavy family from Puligny-Montrachet and the maternal family from Pommard. After six years at wine school and experiences in viticulture across four continents, Romaric assumed leadership of the winery, blending precision, tradition, and innovation in the cultivation of 15 hectares spread across 14 appellations.

Among his wines, Chavy-Chouet La Taupe Bourgogne Rouge stands out for its elegant and profound character. Made from pinot noir vines that are 70 years old and sustainably grown on clay soils, this wine is vinified with minimal intervention: 100% destemmed, with gentle punching down and some pumping over, and aged for 10 months in French oak barrels, 10% of which are new.

Chavy-Chouet La Taupe Bourgogne Rouge embodies the dedication of entire generations and the philosophy of Romaric. It is a testament to passion, precision, and respect for the terroir—values instilled in him from a young age by his mentors and now reflected in each of his bottles.
