This presents a considerable challenge given that in this region—situated in the central-eastern part of France—many producers still resist the idea of freeing their vineyards from chemical products or herbicides. Côtes d’Auxerre, north of Burgundy, Clèment has returned to cultivate this chardonnay monovarietal. It has been proven that this grape variety responds exceptionally well to the clay-limestone soils of the area. And the outcome is nothing short of spectacular! Initially, he began by purchasing grapes from various growers (including his father); now, Clèment, with his sister Caroline's assistance, has managed to take the helm of several hectares and plots, including the one where Clément Lavallée Bourgogne Côtes d'Auxerre Grand Roche Blanc is crafted. Furthermore, Clément Lavallée cultivates these vineyards, which are over 35 years old, organically, without chemicals or insecticides, freeing all the vines from any products that could potentially compromise the final result. In this regard, Clèment is exceedingly meticulous, even resorting to using vintage machinery, which is much lighter and less cumbersome than modern equipment.
 
For Clèment, quality far outweighs quantity. So much so that in the beginning, when he was starting his initial vinifications, this vintner preferred to focus on just 1.5 hectares, gradually expanding, making sure not to make any missteps. A consummate master and producer who knows exactly what he's doing, not only in the vineyard but also in the winery, where he relies on indigenous yeasts, spontaneous fermentations, and minimal intervention. According to Clément, wine should be handled as little as possible, even when it comes to moving it, where racking will be done by gravity, without the use of any machinery.
