COS Vermouth Rosso Nero d’Avola is not merely a vermouth; it is an experience encapsulating the passion and commitment to nature of Azienda Agricola COS, a pioneering winery in biodynamic viticulture since 1980 in the heart of Sicily. Crafted from the red variety nero d’Avola, this vermouth embodies the richness and character of Sicilian soils, through an aromatic complexity that will captivate even the most discerning palates.
 
Azienda Agricola COS prides itself on working in an ecological and biodynamic manner, preserving the soil's health and the purity of its grapes. In a historic and privileged region like Vittoria, their vineyards, untouched by synthetic or chemical products, are cultivated with the same care one would afford a treasure. Aged in old barrels, COS Vermouth Rosso Nero D’Avola stands out for its 6-month maturation, a process that imparts a complexity and sophistication that does not go unnoticed.
 
With a 30-day maceration with selected botanicals, this vermouth achieves a perfect balance between the fruity flavour of the nero d’Avola variety and the aromatic notes of wild herbs and citrus peel. Its barrel ageing renders it a less sweet vermouth than usual, darker and with a pronounced "vinous" personality, making it ideal for connoisseur palates.
