About Don Zoilo Palo Cortado en Rama 15 Años
You have surely seen these surnames more than once on a bottle: Williams & Humbert. The Jerez-based house boasts such a generous collection of wines and a fabulous heritage of casks that it is not surprising they created ranges with their own names. In the 1960s, Don Zoilo was born, an iconic brand designed to pay tribute to the bodega's finest soleras. The range includes Fino, Amontillado, Oloroso, Pedro Ximénez, and Palo Cortado, all crafted using the traditional system of criaderas and soleras.
Within this family of soleras, Palo Cortado holds a fascinating place due to its almost novel-like origin. In the past, the cellar master would walk through the criaderas with chalk in hand, marking a vertical line, a "palo," on the casks destined for biological aging. However, sometimes, in the silence of the bodega, the protective layer of yeast would unexpectedly disappear, and the wine would begin to oxidise, gaining remarkable structure and body. Upon discovering this, the cellar master would cross the initial line with a horizontal stroke. Hence the name Palo Cortado. Don Zoilo Palo Cortado en Rama 15 Años is the result of this beautiful accident, the purest expression of a mystery that the house has proudly bottled.
From Jerez de la Frontera, in the heart of the DO Jerez-Xérès-Sherry, this wine originates from a legendary terroir. The bodega selects palomino fino grapes from vineyards located in the renowned albariza pagos, that white, chalky, and porous soil so characteristic of the Jerez region. This soil has the ability to absorb winter rains and retain moisture in the subsoil during the hottest months. The Mediterranean climate, shaped by the proximity of the Atlantic Ocean and the alternation of the levante and poniente winds, allows for a slow and balanced maturation. Viticulture is carried out through manual harvesting, seeking the utmost health of the grape to obtain a must of great delicacy.
The production of Don Zoilo Palo Cortado en Rama 15 Años follows the traditional method of criaderas and soleras. After alcoholic fermentation, the must is fortified, meaning wine alcohol is added until it reaches 15 degrees to begin its aging under a veil of flor. When the layer of yeast spontaneously vanishes, the wine is fortified again to 18 degrees to definitively interrupt the biological path and move on to a long oxidative aging in contact with oxygen. The wine rests in American oak casks for an average of 12 years. Finally, it is bottled en rama, which means it is not subjected to aggressive filtration or clarification, preserving its colour, texture, and natural intensity.
