About Pandorga Tintilla de Rota

Memory is the set of representations of the past that constitute the mediating level between the time lived and the feeling of identity in the present moment. For the good of all, it is important to keep this in mind. In the world of wine, oenologist and passionate vine expert Ramiro Ibáñez is one of the essential voices in the recovery of the wine-related memory of Marco de Jerez (Cádiz). As one of the producers who knows the most about the wines from this land, at his winery Cota 45 he has launched a line of wines, Pandorga, that is reviving the way wine was made in the eighteenth and early nineteenth centuries. A family of naturally sweet wines made from indigenous and ungrafted grapes.

Pandorga Tintilla de Rota is a sweet wine for which the grapes, of the Tintilla de Rota variety, are born and made on the chalky albariza soil typical of this area of southern Spain. grapes that, once harvested, are spread out on the pasera, a special site set aside for drying, to dry in the sun for 7 days. They are then pressed and, the next day, spontaneous fermentation begins in barrels for a couple of months without temperature control until it naturally comes to an end.

With a yield of only 13.5% (2,000 kg produces just 270 litres), Pandorga Tintilla de Rota is the result of true passion. Passion for wine, for the soils and for a long history. A sweet wine created using traditional methods that presents an authentic and, at the same time, different sherry.

 

2020

Pandorga Tintilla de Rota 2020 is a sweet wine with aromas of very ripe red fruits, spicy notes and hints of wood. The palate is dense, rich in glycerin and full-bodied. A wine with good structure and great acidity that partially balances the sweetness. The finish is long with lingering retronasal olfaction.
