About Pardas Sus Scrofa

Over the past two decades, Celler Pardas has traversed half of Catalonia in pursuit of discovering, selecting, and reviving old sumoll vines. This endeavour ultimately led them to Can Comas, where they meticulously selected plant material and grafted it onto their own vineyards. Out of this obsession to comprehend a variety and elevate it to its fullest potential emerges Pardas Sus Scrofa.
 
In Pardas Sus Scrofa, nearly every decision was made from the outset. The choice of location, soil, orientation, rootstock, plant selection, training, and pruning are all integral to a unified project aimed at ensuring the sumoll achieves its finest expression on the estate. The vineyard, situated in Torrelavit, is cultivated using ecological and rational viticulture, adhering to Celler Pardas' unique "non-cultivation" philosophy: free from herbicides, insecticides, synthetic products, and without ploughing the soil, which is protected by spontaneous ground cover. Pardas Sus Scrofa originates from various sumoll plots, including Sumoll Cementiri, Fages, Ribas, Torner, and Coster, established on clay-limestone soils. The harvest is conducted manually with meticulous selection both in the field and at the winery. In this vintage, the grapes are picked on different dates throughout September and delivered to the winery in small 20 kg boxes.
 
The winemaking process seeks minimal intervention. Half of the grapes for Pardas Sus Scrofa are destemmed and crushed, while the other half undergoes fermentation whole, with stems. Both parts undergo a 12-day maceration at 22 °C and a spontaneous fermentation with indigenous yeasts. Subsequently, the wine spends several months in cement tanks, without stabilisation or clarification, to preserve the fruit's expression intact.
 
In Sus Scrofa, Celler Pardas invests the labour and patience. The bottle does the rest. All that remains is to savour it.
