About Vermouth Canasta
Perhaps the names Alexander Williams and Arthur Humbert may not be immediately familiar, but when you encounter those two surnames together forming Williams & Humbert, you instantly associate them with internationally renowned fortified wines, centuries-old soleras, and the elegance of the equestrian world in Jerez de la Frontera. Founded in 1877, this British firm, based in the south, uniquely understood the value of time and patience. Within the walls of its monumental bodega, Canasta was born, an iconic sweet wine that became a staple on Spanish tables. However, in the Jerez region, there was also an artisanal tradition of visiting old apothecaries to infuse local wines with wild plants, flowers, and bitter roots to stimulate the appetite. Vermouth Canasta is the natural result of this intuition.
From the municipal area of Jerez de la Frontera, in the province of Cádiz, Vermouth Canasta embodies the richness and typicality of the Cadiz landscape. The foundation of this creation comes from selected vineyards rooted in albariza soils, that distinctive white, limestone, porous earth of the region that acts as a natural sponge, retaining the moisture from winter rains to nourish the vines during the dry summer months. The Mediterranean climate of the area, heavily influenced by the proximity of the Atlantic Ocean and the continuous contrast between the east and west winds, allows for a slow and balanced ripening of the grapes. The varieties used are palomino fino and pedro ximénez, cultivated under a philosophy of traditional viticulture that respects the environment, seeking maximum concentration before harvesting.
For the production of Vermouth Canasta, the bodega uses its renowned Canasta wine as a base. This wine is created from a blend of Oloroso and Pedro Ximénez aged together for 6 years in American oak casks using the traditional soleras and criaderas system, an oxidative aging process where younger wines gradually enrich the older ones. Upon this base of noble wine, a slow maceration of a carefully selected array of botanicals is performed. The blend includes aromatic plants such as wormwood and sage, dried chamomile flowers, hops, elderflower, saffron, and cloves, bitter orange peel, Ceylon cinnamon, quinine, and nutmeg, along with bitter roots of angelica, gentian, and iris. After naturally extracting all the essences and aromas from the plants, the vermouth is blended and left to rest until it achieves perfect integration before being bottled.
