From El Lagar de Moha, the first winery in the designation certified as , comes this young, , and vegan white wine that embodies the purest expression of northwestern Spain. In this region, with a rich winemaking tradition, the soils are predominantly composed of pebbles, poor in matter, with a limestone and clay subsoil. While water drains easily on the surface, it is retained below, becoming a significant reservoir that greatly aids during the heat, especially in the very dry and hot summer months. In this regard, and considering the challenges of working the land without the extra help of chemical products, the remarkable efforts of its owners, Alberto Moro and Ángeles Ortega, must be highlighted. All tasks are performed manually, including the harvest, and the vineyards (spread between Rueda and Nava del Rey) are cultivated organically.
The other half of El Lagar de Moha Sapientia Sauvignon Blanc is crafted in the winery, with spontaneous fermentations using indigenous yeasts that were already present on the grape skins.
